Firing Up Your Passion for the F&B Business
Build a strong foundation in Food & Beverage (F&B) management and operation with the Diploma in Food & Beverage Business. This course provides students with the foundation for an F&B career before branching out to specialise in either F&B Management or Culinary Arts.
Students pursuing the F&B Management specialisation will learn about restaurant operations; while those in the Culinary Arts specialisation, they will be trained by renowned chefs and acquire knowledge about the nutritional sciences as well as food safety and hygiene.
As part of the practical curriculum during the Teaching Enterprise Project (TEP) attachments, students have the opportunity to work with, and be mentored by, celebrity chefs at the training restaurant, L'Rez. Students can also gain hands-on experience in running an F&B establishment at the training café, L’Café. Culinary Arts specialisation students will get to produce their own culinary creations at the Central Production Kitchen.
You will learn strategies for restaurant operations and excel in customer service under the guidance of industry professionals and restaurant managers, who will develop an appreciation of the essentials in F&B business in you. Acquire knowledge in F&B operations management that will make you an outstanding professional in this sector.
You will discover techniques to enhance your cooking skills and excel in food preparation. You will acquire knowledge about nutritional sciences, food safety & hygiene, and also deepen skills in Asian and International styles of cooking and other culinary practices. Students who aspire to pursue an advanced diploma or a degree and meet the entry requirements of the universities or institutions can progress into advanced diploma or bachelor degree courses in areas such as business management, hospitality management, culinary arts & food service management, food marketing, food service entrepreneurship, F&B management, baking and pastry arts, etc
L'Rez, NYP's training restaurant, was transformed into a retro-style diner complete with sepia prints lining its walls as part of the Graduation Showcase for the Diploma in Food & Beverage Business (DFBB) students held on Aug 4.
Family and friends of DFBB students were in for a night of culinary pleasure. Already skilled in food preparation and food service, the students took it a step further and presented guests with an innovative 8-course degustation menu complete with wine pairing.
Working on a 'mod-Sing' theme, students infused traditional local cuisine with a modern twist. As L'Rez was recently granted a liquor license, students worked with a sommelier to complement their dishes with different wines and mocktails.
The event ended off with a personalised touch - students served the final dish to their loved ones who supported them in their journey.
