DFBB students serve up an evening of unique flavours

L’Rez held a degustation dinner for invited industry guests and colleagues on 27 and 28 Jan. Guests were treated to a six-course meal created by 3rd year students from the Diploma in Food & Beverage Business. Working on the theme “Asian Night Market”, students refined authentic South-East Asian specialities with Western techniques to deliver mouth-watering delights. Each course was specially developed and paired with cocktails, wine, sake or mocktails.  The dinner kicked off with sparkling sake, followed by an Amuse Bouche of mini shells containing small bites of local dishes: rojak, wonton and bak kut teh. Guests ended their evening with a deconstructed chendol dessert paired with a whiskey cocktail.

The menu was specifically designed to showcase the gastronomic expertise of students specialising in Culinary Arts, while providing an opportunity for students specialising in F&B Management to impress guests with their organisation skills and professional service.

Bennett Lim, lecturer-in-charge of L’Rez, shared that the event received support from industry partners with the Creative Eateries Group, Lo & Behold Group, Les Amis Group and more, in attendance.
