Lina Tan, SAS specialist and senior lecturer, recalled that when her late father-in-law developed dysphagia (a swallowing difficulty) due to old age, his meals were limited to porridge and pureed vegetables. After wondering if she’d like to eat such food if she were to have the same condition, she hit upon an innovative idea.  Working with Singapore’s leading surimi seafood manufacturer, Thong Siek Food Industry, and urban farm Opal Resources, she developed delicious and visually appealing Teochew fishcakes and pureed yong tau foo which are fortified with nutrients, and more importantly, have softer texture, that can be consumed safely - without a risk of choking - by individuals with dysphagia.

Lina’s idea, which blended nutrition with food technology, won her the Exemplary Innovator Award at the Public Sector Transformation (PST) Awards on 29 Jul 2022.
