Course description
This module is designed to prepare learners with the abilities to apply the knowledge and skills in preparing confinement dishes such as Vinegar Pig Trotters and Eggs, Chicken with Ginger, Sesame Oil & Chinese Wine and Snow Fungus, Red Dates & Wolfberries Jelly.Learners will gain hands on experience in selecting and portoning of raw ingredients, seasoning and flavouring of the confinement dishes. Learners will also gain knowledge on the importance of temperature control in cooking, determine doneness and extraction of essence off the ingredients used.
