Course objectives
This course is designed for culinary personnel to learn about hawker noodle dishes. Learners will learn how to use different ingredients to create different flavours for the noodles. Learners will also master both moist and dry heat preparation methods used to cook noodles dishes.
Course description
Upon completion of this unity, learners will attain knowledge and skills in the following area: 1. Understanding the principles of noodle cooking techniques2. Understanding the types of condiments, herbs and spices used in preparing local hawker favourite noodle dishes3. Master the methods and techniques for seasoning, flavouring and marinating of ingredients4. Master the technique of both moist and dry heat cooking methods that can be used on noodle dishes at appropriate cooking temperature to determine the desired doneness
