Course objectives
This course is designed for bakers and pastry chefs who wish to elevate their laminated pastry dough skills through the creation of various croissant products. Learners will gain hands-on experience in intermediate pastry techniques in dough lamination and dough shaping. Learners will also learn how to create various fillings for the croissants.

Upon completion of this unit, learners will attain knowledge and skills in the following areas: 1. Understand the principles of croissants 2. Understand the importance of lamination process used in croissant 3. Master the skills in croissant making techniques, such as lamination, shaping, proofing and baking 4. Learn how to assess the doneness of baked croissants 5. Master the preparation methods for croissant fillings and toppings 6. Develop skills to troubleshoot common croissant preparation and assembly issues.
