About this course
Course objectives
At the end of the programme, learners will be able to:• Demonstrate an extremely good understanding of food hygiene and safety policies.• Apply and practice food hygiene audit knowledge at the workplace• Produce artisanal breads and sculptures in accordance to industry standards• Demonstrate a good understanding of nutritional and dietary requirements and substitutes for healthy baking• Apply the correct skills and technique in dough lamination (Puff pastry)• Produce a wide selection of puff pastry products• Demonstrate a good understanding of the specific tools and equipment, ingredients and techniques involved in the preparation of advanced confectionaries and pastries• Produce a variety of hot and cold desserts with the application of advanced baking techniques• Demonstrate a good understanding of the standard service operations and flow
Course description
This programme is designed to provide impassioned learners with an appetence for acquiring in-depth knowledge and skills required for producing advanced pastries and bakery products. Learners will also be equipped with the necessary competencies and techniques required for advanced pastry and baking processes to enable them to deliver higher product standards.
