Course objectives
This course is designed for culinary personnel to learn about delicate and natural flavours of Chinese Cantonese cuisine. Learners will be able to prepare a variety of Chinese Canton main dishes which utilises a combination of moist and dry heat cooking methods. Learners will get an insight of seasonings and ingredients commonly used in these favourite Cantonese cuisine.
Course description
Upon completion of this unity, learners will attain knowledge and skills in the following area: 1. Understanding the principles of Chinese Cantonese cooking techniques2. Understanding the types of condiments used in preparing Chinese Cantonese dishes3. Master the methods and techniques for seasoning, flavouring and marinating of ingredients4. Master the techniques of moist and dry heat cooking methods that can be used on basic Cantonese dishes at appropriate cooking temperature to determine the desired doneness
