Course objectives

This course is designed for culinary personnel to learn about Indonesian dishes. Learners will learn about the cultural significance of Indonesian dishes. Learners will able to explore the unique flavours and taste generated by a variety of spices which are typicaly used in Indonesian dishes. Learners will be guided through the preparation and plating presentation of a variety of Indonesian dishes.

Understanding the application and development of flavours through spices utilisation3. Master the preparation of key techniques such as rempah preparation for Indonesian cuisine4. Master moist and dry heat cooking methods used in Indonesian cuisine5. Develop plating skills
