Learners will acquire skills in ingredient handling, mixing, shaping, and baking to create a variety of mooncakes. The course also guide learners through the preparation of mooncake filling from scratch, giving learners a comprehensive foundation in authentic mooncake craftsmanship.

Course description

Upon completion of this course, learners will attain knowledge and skills in the following area: • Follow recipes and methods of preparing traditional and snowskin mooncakes • Understand the principles of mooncake dough preparation and baking • Apply techniques for rolling out, shaping, and moulding mooncake doughs and snowskin wraps • Prepare mooncake filling from scratch for various mooncake • Assemble finished mooncakes with appropriate fillings, ensuring balance and presentation
