Course objectives
At the end of the lesson, learners will be able to:• Prepare the Chwee Kueh and Char Kueh batter/mixture to
its right consistency
• Control and adjust cooking, steaming temperatures and duration for the Chwee Kueh and Char Kueh, applying moist heat cooking techniques appropriately
• Prepare the condiments and garnishes that are cooked and served with the dishes
• Assemble and present the dish to its final form
Course description
This module is designed to provide learners with a comprehensive understanding in the selection and preparation of condiments from raw ingredients. Learners will be provided with hands on training to prepare Chinese dishes such as Chwee Kueh and Char Kueh using moist heat cooking technique.
