Licensing Eco-sesame Muffins for Sustainable Baking
As sustainability and healthy eating gain importance, Nanyang Polytechnic’s food innovation team created the Eco-Sesame Muffin – a tasty, nutritious, and eco-friendly bakery treat.
Flaunting a distinctive, earthy brown hue – much like any sesame cake – you might not guess what makes our Eco-Sesame Muffins truly special.
Just two months after being named a finalist for Best Bakery Product at the World Food Innovation Awards in March 2024, NYP's School of Applied Sciences partnered with AJ Delights to bring its innovative muffin recipe to market.
At the heart of the recipe is nutrient-rich sesame oil produced by Oh Aik Guan Food Industrial, one of Singapore’s oldest sesame oil makers.
It’s a triple win: Oh Aik Guan reduces waste, NYP brings our innovation to life, and AJ Delights thrives with a delicious, sustainable product.

To ensure a seamless technology transfer, NYP staff provided hands-on training to AJ Delights in producing the Eco-Sesame Muffins, supporting the successful launch of this innovative creation.
Why Does it Matter?
Building on the success of the Eco-Sesame Muffin, NYP graduates from the Dip in Food Science & Nutrition have developed a new recipe for Eco-Smart Corn Cheese Muffins – continuing NYP's drive for innovative, sustainable baked goods.
Incorporating familiar and beloved ingredients like sweet corn and cheese, the students aim to nudge Singaporean children towards eco-friendly eating habits. They also used upcycled okara from Super Bean, a byproduct from Mr. Bean’s soymilk production.
Recognising the potential of this child-friendly and sustainable idea, AJ Delights worked with our students to refine the recipe for large-scale production.
