Development of Vegetarian Bento & On-the-job Training Blueprint for Leaf Corner
Our Applied Science and Business Management students created new recipes and supported vegetarian restaurant Leaf Corner, to encourage youth to embrace a plant-based lifestyle.
Leaf Corner Pte Ltd faced a distinctive challenge in captivating the attention of the youth and encouraging them to embrace a plant-based lifestyle. Recognising this, Nanyang Polytechnic’s School of Applied Science (SAS) and School of Business Management (SBM) collaborated to address this challenge, resulting in the development of Vegetarian Bento Recipes for the youth and the subsequent implementation of an On-the-Job Training (OJT) blueprint by the National Centre of Excellence for Workplace Learning (NACE).

The collaboration commenced with the SBM conducting an insightful customer sensing exercise, utilising surveys and focus groups to gather valuable data on the preferences and needs of the target market. The findings from this exercise guided the Nutrition Science students of the SAS in the creation of 16 bento vegetarian recipes. Following meticulous evaluation, Leaf Corner incorporated three of these recipes into their menu, resulting in a 10% boost in sales and positive customer feedback.
Recognising the importance of providing healthier food options, Leaf Corner requested an analysis of their existing eight recipes, to modify them to meet the rigorous standards required for Healthier Choice endorsement. With these modified recipes produced by our Applied Science students, Leaf Corner was proud to offer an extensive menu of Healthier Choice options to their health-conscious customers.
The National Centre of Excellence for Workplace Learning (NACE) Led by NYP also assisted Leaf Corner to design a comprehensive OJT blueprint. This tailored blueprint covered everything from efficient kitchen workflows and exemplary customer service strategies, optimising both back-of-house and front-of-house operations.
